Coconut milk rice
1 cup basmati rice
1 can of coconut milk
1 tbsp salt
Instructions (stove top):
Wash the basmati rice and place it in a saucepan
Add 2 cups of water and cook the rice (covered) over medium heat until soft and water reduce to just bubbling through rice
Add salt to coconut milk and add ¾ of the can to bubbling rice and mix well and continue to cook until rice is thick and all the water is evaporated.
Mix well and layer on a dish and enjoy with coconut curry chicken
Instructions (rice cooker):
Add all of the above ingredients to the rice cooker and cook
Served hot with coconut chicken curry
