Yellow fin tuna (350g)

Cauliflower (350g)

Sliced carrots (1-2)

1 red onion chopped

2-3 garlic (chopped)

Islands Harvest Yellow Curry Coconut milk 1 Can

Islands Harvest coconut vinegar

Salt & pepper

Cilantro (garnish)

Instructions:

Cut the tuna into 1 inch cubes and wash with lime water

Drain out water and add salt and pepper (1 tsp each)

Add 1 tbsp of Islands Harvest Coconut vinegar

Mix well and let sit for 10 mins.

Add all of the remaining ingredients (except cilantro) to fish and mix well. Sauté in 1 tbsp of oil or cooking butter.

Cook covered for 15 mins on medium heat

Open lid and cook on low heat for 5 more mins or until oil starts to separate. Check salt

Garnish with cilantro and serve hot over rice or enjoy with naan/bread
