Shitake Mushroom (~150g)

1-2 medium size carrots (sliced)

Bok Choy halved (3-4)

Protein of choice or none

1 tsp of oyster sauce (optional)

Islands Harvest Red Curry Coconut Milk 1 can

Noodles 1 pack (Maggie preferred)

Instructions:

Sauté mushrooms and carrots on high for 5 mins

Add 1 tsp of oyster sauce (optional)

Add & sauté Bok Choy for 3 mins

Add red curry coconut milk can and simmer for 10 mins on medium heat. Do not cover.

Add the noodles and cook on a medium heat for 5 mins or until soft

Add salt to taste. 

Add 1-2 teaspoon of Islands harvest coconut milk if too spicy or wants creamier (optional)

Serve hot
