One pot chicken rice

1lb Chicken cut (thighs or breasts) – can replace with Tofu or mushrooms 

1-2 Carrots diced

1-2 Celery sticks diced

1 red onion diced

2 potatoes dices

2 tbsp of oil

2 cup rice

½ cup cashews or peanuts

1 can of Islands harvest green coconut curry milk

Instructions:

Add everything except rice and Islands Harvest Green curry coconut milk into oil and sauté for 5 mins

Transfer to rice cooker/instapot

Add washed rice into this and add 1 can of Islands Harvest Green curry coconut milk

Add more water as need so the liquid level is about 1 inch over the content

Use the settings for cooking rice

Serve hot
